Rustic Sundried Tomato Pesto

If there is one thing I cannot get enough of, it is pasta. Your girl LOVES it!! But let’s be honest here…who doesn’t love pasta?!

For the past few years I’ve fallen in love with Banza and it is a pantry staple of mine, always having boxes on hand. It’s a chickpea pasta that is jam packed with protein. I typically get mine at Target - I find they have the best prices around me [$just 2.99! plus 5% off with my Target Red Card] and the most selection of pasta shapes. Although the cavatappi is my favorite shape, I do like to have a variety of pasta shapes on hand for different dishes.

If I’m being completely honest, I probably eat Banza at least 3 times a week. No shame in my chickpea pasta game! I have a few standard recipes/dishes that I make for quick and healthy meals that always hit the spot. My recent favorite in the New Year has been tossing it in this homemade rustic sundried tomato pesto I made and y’all….it is the bomb dot com! It is so full of flavor and made with just a few simple ingredients that I typically always have on hand. I think this would be equally delicious on some crostini, on sandwhiches, in tacos, basically all the things it is that good.

INGREDIENTS

  • 1 shallot

  • 2-3 cloves of garlic

  • 1/4 cup walnuts

  • 1/3 cup nutritional yeast

  • 6oz sundried tomatoes [I get mine from Trader Joes - they come in a bag and are not packed in any oil which I like!]

  • juice of half a lemon

  • 2 generous handfuls of fresh basil

  • 2/3 cup oil [I would suggest olive oil or avocado oil. If you want a smoother pesto consistency, add more oil]

  • salt + pepper to taste

  • optional: red pepper flakes for a little kick

DIRECTIONS

  • Place all ingredients into your blender or food processor [I used my Ninja blender] and blend until combined and at your desired consistency! That’s it!
