Mint Chocolate Chip Brownie Bites
If there is one thing I have loved since childhood it is anything mint chocolate. I’m surprised I didn’t turn in to mint chocolate chip ice cream as a kid I ate it so much! From ice cream, to Andes mints, to York peppermint patties, to peppermint mochas and hot chocolate and beyond - no such thing as too much mint chocolate!
The past couple of times I’ve worked from Starbucks I picked up one of their peppermint brownie cake pops. If you haven’t tried them yet, you’re missing out! It was such a delicious treat and I thought to myself: why couldn’t I make a version of this myself? And that’s where this creation started! Pretty ground breaking, right?! lol
I used two of my favorites for this recipe - Andes mints and Kodiak Cakes. I’ve been using Kodiak Cakes’ pancake mix for probably 3-4 years now and love that they have expand to have baking mixes now with all the great ingredients and extra protein.
This recipe is SO simple and would be fun to make with your kids for the holidays. The minty flavor is perfect for the holidays and who doesn’t love a good brownie?! Here’s what you’ll need…
INGREDIENTS
Brownies:
1 box of Kodiak Cakes chocolate brownie mix
2 large eggs
1/2 cup butter
2 tbsp coconut oil
2 tbsp filtered water
Coating
1 cup of Andes creme de menthe baking chips
1 tbps organic coconut oil
DIRECTIONS
Make brownie mix according to the Kodiak Cakes packaging. I used coconut oil instead of vegetable oil.
Pour brownie batter into a 9x9 greased pan. I sprayed the pan with coconut oil.
Cook for ~20 minutes, just slightly under what the box recommends.
Let brownies cool until you are able to touch and handle them.
Cut off the “crust” of the brownies
Crumble up brownies and begin to roll into balls. Place onto a parchment lined baking sheet. [You can make these any size you want. When I made them it made 15 but you could certainly make them smaller to have more.]
Put Andes baking chips and 1 tbsp of coconut oil into a microwave safe dish. Cook in 30 second incements, mixing between each, until all of the baking chips are melted.
One by one, coat the brownies in the melted Andes baking chips and sprinkle with a few of the Andes baking chips for a pop of color and decoration.
Once the coating hardens, serve and enjoy!
