Peanut Butter Chocolate Coconut Energy Bites
Happy Friday friends!! It's been quite a while since I shared any of my recipes on here [hello life outside the gram] but I'm back and could not wait to share these delicious, drool worthy bites with you!
If you know me or have been following me for any length of time, you know there is one thing I cannot get enough of...peanut butter. And not just any peanut butter, Trader Joe's peanut butter with chia & flax. I'm telling you it is life changing and the best pb in the game! If you haven't tried it you need to pick some up during your next #groceryhaul for sure!
I decided to use my favorite pb as a base for these energy bites and YUM! - did not disappoint one bit. Mixed with chocolate chunks, coconut and so much more, these are sure to make your taste buds as happy as a bird with a french fry [or me with a new jar of Trader Joe's pb with chia & flax].
These are SO super easy to make and can certainly be customized based on the ingredients you have on hand. Just add them all to a bowl, combine with your hands [let's be honest, playing with your food at the age of 28 is FUN], roll into balls, let them set in the fridge for a bit and then try really, realllyyyyy hard not to eat all of them in one sitting!

PEANUT BUTTER CHOCOLATE COCONUT ENERGY BITES
Yields: 12 bites [or balls - I just couldn't say balls 9827394825 times in one post lol]
Ingredients:
1 cup Trader Joe's peanut butter with chia & flax [you can use regular peanut butter, too]
2 scoops Vital Proteins Collagen Peptides
1 cup oats [can use old fashioned or quick oats]
1/4 cup Simply Balanced 72% cacoa organic dark chocolate chunks
1/4 cup flax seed meal
2 tbsp Bob's Red Mill chia seeds
1 tbsp Simply Balanced organic honey [optional]
Directions:
Add all ingredients in a bowl
Mix together with your hands until "dough" starts to hold together
Roll into balls
Place balls on a parchment lined baking tray in the fridge to set for 20-30 minutes
Enjoy! :)
Store in an air tight container for up to a week...if you can actually make them last that long!
