Recipe: Protein Chocolate Chip Banana Bread
Call me basic but I’ve had a serious craving for getting into the kitchen to do some quarantine baking. Not the endless piles of sweets and cookies, but the cozy kind. After perusing ideas galore on Pinterest, it clicked…banana bread. And not just any banana bread, chocolate chip banana bread with a slightly healthy twist.
I went through recipe after recipe and couldn’t believe the amount of sugar, syrup or dates being added in. Don’t get me wrong, I love a good sweet treat but with ripe bananas and chocolate chips already in the mix, that seemed sweet enough in my mind. So in typical Stepf fashion, I decided to create my own recipe!
Y’all, not to toot my own horn but WOW this chocolate chip banana bread is the bomb dot com! So full of flavor, golden brown on the outside and moist on the inside, with a secret addition of some extra protein. Warm up a slice (or two) in the morning, top with a little butter and you’ve got yourself the perfect companion to your morning coffee.

RECIPE: PROTEIN CHOCOLATE CHIP BANANA BREAD
INGREDIENTS
1 tsp baking soda
3-4 ripe bananas
3 tbsp unsweetened almond milk (or milk of your choosing)
2 eggs
1/2 cup unsalted butter, softened
1/3 cup chocolate chips (I used Enjoy Life mini morsels)
Optional: 1 tsp of cinnamon, 2 scoops of Vital Proteins collagen peptides)
DIRECTIONS
Preheat oven to 350 degrees.
Combine butter, eggs and almond milk in either a stand mixer or in a mixing bowl with hand mixer.
Add bananas and mix until desired consistency (you can make it silky smooth or leave subtle chunks of the banana).
Add Kodiak Cakes mix and baking soda and combine until batter consistency.
Add chocolate chips and combine using a spoon or spatula.
Poor batter into pan of choice (I used a 6x10 glass baking dish and it worked perfect!).
Bake at 350 degrees for 35-45 minutes (Being in Denver with the altitude, I cooked mine for 45-minutes and it was perfect! If you aren’t at altitude, you will be on the lower range of cook time).
Let cool for 10-minutes and then ENJOY!
